Chapati is made from wheat and high in starch. When starch is eaten, it’s transforms molecularly by enzymes into glucose. Glucose causes the body to produce insulin. In excess, your body transforms glucose into fats.

 A portion of these chain fatty acids attached to glyceride molecules to form triglycerides. These triglycerides enter cells and the chains drop off the glycerides to remain as fats in the cells. The glyceride molecule picks up more fat chains from the liver before returning to the cell to move into cells as fats.

Meanwhile, the insulin attempts to put glucose into the cell as energy. Insulin action is shut down by the pancreas’ glucagon, in response to cells loaded with glucose. A pancreas that is fatigued from overwork cannot produce enough glucagon, which leads to the cells developing insulin resistance, causing them to tuck the insulin glucose even further into their cells. Glucose does not go back into the liver to be transformed into fats, leaving some in the blood. Too much glucose in the blood is known as diabetes.

Getting too much starch and sugar can and will make this whole cycle go off the rails. If you only ate chapatis all the time, you would eventually develop diseases due to vitamin deficiency.

The other side effect of consuming chapati is that it has to be cooked properly in specialty ovens at around 500 degrees C, which leads to charred parts on the chapati. There may be carcinogenic chemicals in these charred bits. You probably won’t get enough to cause cancer, but why take the risk?
